Medium roast: Smooth, balanced and easy to love, with a soft sweetness and gentle acidity. Think black tea, orange and grape. It suits just about anything, filter, French press, or a slow Sunday morning pour.

Dark roast: For those who like it strong and full-bodied, with that old-school punch. Rich and robust, it'll get you through even the busiest afternoon, whether you're drinking it as a long black, a straight espresso, or dressed up with a splash of milk.

How it's made: Washed process. It starts with hand-picking only the ripest cherries, then a proper 72-hour ferment in tank to let the flavour develop slowly. From there the cherries are pulped and dried under the sun in solar tents for over 170 hours, with the temperature carefully managed the whole time. The result is a micro-lot that's had real care and patience put into it, long before it reaches your cup.

Varietals: Bourbon and Caturra, from the Cajamarca and Chanchamayo regions in Peru.
